Crockpot Beef Barley Stew


HI!  So what is on your supper table?

Today we had crockpot beef stew.  I like to take the leftovers from a roast and the broth and add it to my crockpot.  Then I toss in whatever leftover veggies I have...in this case I had carrots.  I added a bunch of water and about a half a bag of barley.  I let it cook for about 5 hours added more salt, pepper and onion powder this time.  A nice warm meal.  We eat ours with just crackers and cheese.

This is one of my very favorite soups! I really like barley and with the leftovers from a pot roast you have the fixings for a great vegetable beef soup!
